Cascabel is a hidden gem in the Mexican Chilli World!

Cascabel is known as the rattle chilli, the inside is hollow and when dried the cascabel becomes like a rattle, traditionally given to babies to play with.

The cascabel skin is very thin and very tough so requires a good long soak to soften up, I’d advise the chilli is broken up before soaking, maybe chopped into small flakes to help.

The dye from such a thin walled chilli is amazing, a real full deep colour.

Warmer than some other mexican chilli at 5000 SHU

Cascabel is sweet nutty in flavour, quite delicate and can hide behind other flavours so its use is to be considered to get the wonderful flavour to come through.
