Happy New Year to you all! I hope you had a lovely Christmas and new year. I just wanted to give you a little update for the new year. We managed to get the walk in fridge installed just before the Christmas break which was fab, its up and running and looking great, the team did a great job. We finished off all our busy Christmas markets in the run up to Christmas as well and as much as we aren’t back at markets until this coming weekend we have been busy with more smokehouse work and other things behind the scenes! The extraction team have been hard at work most of last week installing the extraction system for the smokehouse (no small project) and they are in today with the finishing touches and wiring but its looking great and its a BIG step towards us getting finished and in.


We also have the brand new cold smoker ordered and it should be finished being manufactured by the end of this week and over to us in the next few weeks, another key part and big step.
We need to crack on with more building works though, including our ceiling, flooring, drainage, plumbing and more electrics, so there’s still plenty of work to do but we are getting there and the bigger ticket items are in or nearly in. The front of house area is looking great and the team are doing a great job of making it look great! The electrics are being done as we speak and we have some fixtures, counters and booth seating to do next but its coming along really well.

As we didn’t manage to raise quite as much money as we would had hoped, there are certain elements that will take us a little longer to get for the project, including some of the cook line equipment which would have allowed us to expand our hot food menu offering from the start. This means we will just have to start out with a smaller menu line up of our key previous food items and for our press/soft launch we will have tasters of our tried and tested favourites as well as some items alluding to what will be to come further down the line. With this in mind, we hope that may be around March/April time depending on building works but will keep everyone posted on this.
We hope to have the shop open (chilled items – cold smoked cheeses etc) at the front around March time as well (building works dependant) and that may be a bit sooner than when we have the hot food available.
Some of your awesome rewards are being made as we speak too! We hope you guys love all the great merch we are having done and we are working on the exclusive reward discount cards etc at the moment so hopefully these should all be ready over the next month or so but will let you know when they are ready to go out.
